Sorrisi with zucchini, carrots and cherry tomatoes

A recipe that smells of spring with our Legù® Sorrisi


50 g of Sorrisi Legù
1 small courgette
1 small carrot
10 cherry tomatoes
Fresh basil
Extra virgin olive oil


Cut the courgette and carrot into small cubes and put them to stew for a few minutes in a pan together with the cherry tomatoes with a tablespoon of extra virgin olive oil, a little water, salt and pepper. They should remain quite crunchy.
In the meantime, cook the Legù smiles for 3 minutes in boiling water.
Drain the pasta and sauté it together with the vegetables to blend the flavors by adding the hand-chopped basil leaves.
Complete with a drizzle of raw extra virgin olive oil.

This pasta can be served hot or even fresh as a pasta salad, great for the summer.
