Spicy rustic salad with honey, rocket and dandelion
Summer, fresh and super healthy!
∙ 160 g Rustici Legù
∙ 600 g Piccadilly cherry tomatoes
∙ 16 stalks of fresh chives
∙ 8 dried tomatoes in extra virgin olive oil
∙ 1 bunch of fresh rocket
∙ 4 teaspoons of dandelion honey
∙ fresh or dry chilli pepper to taste
∙ oregano to taste
∙ EVO oil
∙ salt and pepper to taste
Cut the cherry tomatoes with a superficial cross cut and blanch them for a minute. Drain them with a
slotted spoon and cool them in a large bowl with water and ice. Drain them again,
pat them with kitchen paper, remove the skin and seeds, and cut them into not too small chunks.
Drain and pat the dried tomatoes with kitchen paper, cut them into fillets.
Coarsely chop 4 handfuls of rocket, washed and dried, and chop the chives.
Boil the Rustici Legù in plenty of water for 3 minutes, drain and cool them gently
under running water.
In a large bowl, combine the Rustici cherry tomatoes, dried tomatoes and rocket. Season
with oil, salt and pepper and add the chives, oregano, chilli and mix gently.
Top with some whole rocket leaves and sprinkle everything with dandelion honey.
