LEGÙ – MIXTURE OF LEGUME FLOUR

Blend of steamed legume flour.

It does not contain gluten, but allows you to obtain a very similar elasticity.
You can use it as an alternative to traditional flours or mix it with the flour you use normally.
It makes an excellent allergen-free thickener and stabiliser for MOUSSE and CREAM.

Ingredients of Classic flavour: steamed Italian legume flour with varying proportions of (white beans, chickpeas, yellow lentils and hulled yellow peas).
Ingredients of Ginger & Curry flavour: steamed Italian legume flour with varying proportions of (white beans, chickpeas, yellow lentils and hulled yellow peas), 2% ginger, 2% curry, salt.
Ingredients of Turmeric & Pepper flavour: steamed Italian legume flour with varying proportions of (white beans, chickpeas, yellow lentils and hulled yellow peas), 3% turmeric, 1% pepper, salt.

Characteristics: naturally rich in vegetable protein, high fibre, produced in Italy. It allows you to obtain an elasticity similar to gluten and is also the ideal thickener and stabiliser.
