CHICCHE legù with dry tomatoes pesto

ingredients for 4 people

  • 250 g Chicche Legù
  • 1 cup of dry tomatoes
  • 1/2 cup of black olives
  • 1 spoon of pine nuts or cashew nuts
  • Some capers
  • Salt and pepper
  • method

    Cook Legù for 2 minutes in boiling water with little salt.

    Stop cooking by adding cold water then drain.
    Add extra virgin olive oil.

    Separately prepare dry tomato sauce:blend dried tomatoes with olives and dried fruits.

    Place Legù and dry tomato sauce on a dish, garnish with capers.
