LEGÙ Legumes Flour Blend


Flour mixture composed of 4 steamed and balanced legumes.

With steam cooking, the legume proteins change shape and become available to bind with water, creating a gluten-like network suitable for creating many recipes.

Perfect for all your sweet (cakes, biscuits, muffins, puddings) and savory (pizza, bread sticks, pancakes, gnocchi) preparations!

It can be used alone (in place of flours containing gluten) or as a thickener in place of cornstarch or other starches and isinglass.

It can also be mixed with normal flours to obtain a dough richer in protein and fiber, softer, lighter, more digestible and tastier.
